Description

A one-pan meal featuring juicy BBQ chicken breast, crispy golden potatoes, and gooey melty cheese. This effortless American-style dish balances sweet, tangy, and savory flavors for a restaurant-quality weeknight dinner.


Ingredients

4 (6-ounce) chicken breasts
2 lbs Golden Russet potatoes
3/4 cup BBQ sauce
1 cup shredded cheddar cheese
1 small yellow onion
2 cloves garlic
2 tbsp olive oil
1 tbsp BBQ sauce (for coating potatoes)


Instructions

Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
Pat chicken breasts dry and season with salt and pepper. Heat oil in the pan, sear chicken 2-3 minutes per side. Set aside.
Cut potatoes into 1-inch cubes. Add to the same pan with onion, garlic, and 1 tbsp BBQ sauce. Toss to coat.
Push chicken atop the potato mixture. Spread remaining BBQ sauce around them. Roast for 25 minutes.
During the final 5 minutes, top with cheese. Let sit on the pan 5 minutes before serving.


Notes

Use a meat thermometer to avoid overcooking (165°F internal temperature)
For deeper flavor, mix brown sugar and paprika into BBQ sauce
Ensure chicken and potatoes are spaced evenly for browning
