Description

A Mediterranean-inspired grilled chicken breast dish bursting with citrus and herb flavors. Zesty lemon, aromatic fresh herbs, and golden char create a juicy, protein-packed main course ready in under 50 minutes.


Ingredients

Chicken breasts (4, 6-ounce each)
Fresh lemon (2)
Olive oil (3 tbsp)
Garlic, minced (2 cloves)
Fresh herbs (1/4 cup oregano, thyme, rosemary)
Salt (1 tsp)
Black pepper (1/2 tsp)


Instructions

Zest one lemon into a bowl. Squeeze remaining juice into the bowl.
Add olive oil, garlic, herbs, salt, and pepper to blend into marinade.
Pound chicken breasts to 1-inch thickness and pour marinade over them.
Seal in a refrigerator-safe bag and marinate for 30 minutes.
Preheat grill to 375–400°F. Brush grates with olive oil to prevent sticking.
Grill chicken breasts 6–8 minutes per side until internal temperature reaches 165°F.
Let rest 5–10 minutes before serving.


Notes

Use skinless, boneless chicken for even cooking
Mix dry herbs in a 1:3 ratio if using dried
Substitute avocado oil for high-heat grilling
Marinate up to 2 hours for stronger flavor
Serve with grilled vegetables or Mediterranean rice
