Description
Crispy yet juicy lemon herb chicken breasts made in the air fryer with fresh citrus, olive oil, and aromatic herbs. This Mediterranean-inspired dish balances golden-brown texture with light, zesty flavors and requires just 35 minutes of hands-on time for four servings.
Ingredients
4 boneless, skinless chicken breasts (4–6 oz each)
1/4 cup lemon juice (freshly squeezed preferred)
1 tsp dried thyme (or 2 tsp fresh thyme)
1 tsp dried oregano (prefer Mediterranean/oily variety)
2 tbsp olive oil (extra virgin recommended)
1 tsp garlic powder (optional but recommended)
1 tsp sea salt (adjust if monitoring sodium)
Instructions
Zest one lemon into a mixing bowl
Add lemon juice, olive oil, thyme, oregano, and salt
Stir until spices dissolve completely
Place chicken breasts in a resealable bag
Pour marinade over chicken and massage for 2 minutes
Refrigerate for 15-30 minutes, not longer
Preheat air fryer to 375°F (190°C) for 3 minutes
Remove chicken from marinade, discarding excess
Place in air fryer basket and cook for 20 minutes until golden and crispy, flipping halfway
Notes
Fresh thyme/oregano may substitute dried with doubled quantity
Check sodium content in Mediterranean oregano if using
Serve with steamed vegetables or rice
Chill time can be reduced to 15 minutes without compromising flavor
