Ingredients
1.5 lbs Chicken Breast, pounded to even thickness
1 cup Heavy Cream, full-fat
0.5 cup Parmesan Cheese, freshly grated
3 cups Fresh Spinach, packed firmly
0.5 cup Sun-dried Tomatoes, oil-packed and drained
2 tbsp Olive Oil, cold-pressed
3 cloves Garlic, minced finely
1 tsp Italian Seasoning
Salt to taste
Instructions
Place olive oil in a large cast-iron skillet over medium-high heat.
Season chicken breasts with salt and Italian seasoning on both sides.
Sear chicken for five minutes per side until golden brown and cooked through.
Remove chicken from the skillet and set aside on a plate.
Lower the heat to medium and add minced garlic to the skillet.
Sauté the garlic for one minute until fragrant.
Pour in the heavy cream and bring to a gentle simmer.
Stir in the grated Parmesan cheese until the sauce thickens.
Add the chopped sun-dried tomatoes and spinach to the sauce.
Stir until the spinach has wilted slightly.
Return the chicken to the skillet to coat in the sauce and heat through before serving.
Notes
Ensure chicken is pounded to an even thickness to guarantee uniform cooking. If the sauce becomes too thick, add a tablespoon of chicken broth or water to reach your desired consistency. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
