Chewy, golden bagels made with honey and whole wheat flour, offering a delicate sweetness and hearty texture. A homemade take on a classic New York style.
Ingredients
4 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
2 1/4 tsp active dry yeast
1 1/2 tsp salt
1/4 cup honey
1 1/2 cups warm water
3/4 cup coarse sugar (for boiling)
Instructions
In a large mixing bowl or stand mixer, combine whole wheat flour, all-purpose flour, salt, and yeast. Mix until evenly distributed.
Add honey and warm water. Knead the mixture using a dough hook, hands, or stand mixer until smooth and elastic (8-10 minutes).
Lightly oil the mixing bowl, cover with a damp cloth, and let the dough rise for 1 hour in a warm place.
Punch down the dough and divide into 8 equal portions. Shape each into smooth balls.
In a large pot, bring 3-4 inches of water and 3/4 cup coarse sugar to a boil. Dip each dough ball in boiling water for 30 seconds, flip, and boil another 30 seconds. Remove and shake off excess water.
Place bagels on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 25-30 minutes until golden. Cool on a wire rack.
Notes
Stone-ground flour can substitute whole wheat flour
Instant yeast may replace active dry yeast
Coarse sugar in boiling water adds a subtle sweet crust
Shape bagels while dough is still malleable
Adjust water temperature to achieve 100°F dough consistency
