Ingredients
1.5 lbs boneless chicken thighs
1 cup 2% fat cottage cheese
1/3 cup buffalo sauce
1.5 cups shredded mozzarella
1/4 cup breadcrumbs
1 tsp garlic powder
1/4 cup grated cheddar cheese
Salt and pepper to taste
Instructions
Cook chicken thighs in skillet with garlic powder until done
Shred cooked chicken with tongs
Blend cottage cheese until smooth in food processor
Mix shredded chicken, buffalo sauce, mozzarella, and seasonings in bowl
Spoon mixture into greased 8×8-inch baking dish
Sprinkle breadcrumbs over top, cover with foil
Bake at 375°F for 15 minutes
Uncover dish, top with cheddar cheese
