Ingredients
Chicken thighs (1-1.5 lbs, cubed), Red bell pepper (1, cubed), Orange bell pepper (1, cubed), Red onion (1/2, chunked), Pineapple chunks (1 cup, fresh or thawed), Hawaiian BBQ sauce (1/2 cup plus more), Avocado oil (1 tbsp), Salt (1/4 tsp), Lime (1 for juice), Cilantro (for garnish), Sesame seeds (for garnish)
Instructions
Preheat oven to 350°F
Line baking sheet with parchment paper and spritz with avocado oil
In a bowl, drizzle avocado oil and salt over chicken
Add cubed peppers, red onion chunks, and 1/2 cup BBQ sauce
Mix thoroughly with hands
Spread mixture on prepared pan
Roast for 20 minutes
Sprinkle pineapple chunks on pan and return to oven
Continue baking 10-20 minutes until chicken reaches 165°F
Squeeze lime juice over all, then garnish with cilantro and sesame seeds
Notes
Thighs yield juicier results than breasts
Spray baking sheet again after adding pineapple to prevent sticking
Avoid overmixing to preserve texture
Add extra BBQ sauce if desired
