Ingredients
8 oz (225g) Contemporary fine pasta (use gluten-free if needed)
6 oz (170g) Skinless turkey slices (halal certified)
1/2 cup Mozzarella pearls (swap for provolone or feta)
1 Romaine lettuce rib (or baby spinach for milder taste)
1/4 cup (60ml) Italian dressing (olive oil & vinegar mix)
1 tbsp Olive oil (for pasta toss)
Instructions
Boil pasta in salted water 3-4 minutes less than package instructions
Drain immediately, rinse with cold water, and pat dry
Place in large bowl and add olive oil to prevent clumping
Finely dice turkey and mozzarella, adding to the pasta
Chop romaine into 1-inch pieces and mix thoroughly
Chill pasta mixture for 10 minutes while preparing dressing
Pour dressing over pasta, tossing gently until evenly coated
Transfer to airtight containers and refrigerate 30 minutes before serving
