Description
Zesty Mediterranean-style chicken skewers marinated in lemon, garlic, and herbs. Juicy and flavorful, ideal for quick meals or summer gatherings with a bright citrus finish.
Ingredients
2 lbs boneless, skinless chicken breasts
2 large lemons (ripe but firm)
5 cloves garlic (minced)
1/4 cup extra virgin olive oil
2 tbsp mixed herbs (rosemary, thyme, oregano)
Salt, to taste
Black pepper, to taste
5 sprigs fresh dill (optional, for garnish)
Instructions
Cut chicken into 1.5-inch cubes and mince garlic.
Zest both lemons using a microplane.
Squeeze 1.5 cups juice from lemons.
Combine olive oil, herbs, salt, and pepper with chicken cubes in a bowl; massage to coat.
Refrigerate marinade for 45 minutes to 2 hours.
Soak wooden skewers in water for 20 minutes to prevent burning.
Alternate chicken cubes and lemon slices on skewers; brush with remaining marinade.
Chill skewers for 10 minutes to firm meat.
Preheat grill to medium-high heat; cook skewers 10-12 minutes, turning occasionally until chicken is fully cooked.
Garnish with fresh dill before serving.
Notes
Use fresh lemons for best juice yield; replace rosemary with thyme if needed.
Metal skewers can substitute soaked wooden ones to prevent charring.
Reserve extra marinade to use as a dipping sauce (discard used marinade after contact with raw chicken).
