Description

Ingredients

2 lb boneless, skinless chicken thighs
1/2 cup low-sodium soy sauce (or grain-based soy for gluten-free)
1/3 cup honey
3 cloves minced garlic
2 tbsp rice vinegar
1 tsp ground ginger
1 tbsp lime juice
1 bundle bell peppers/zucchini (optional)
Red onion slices (optional)


Instructions

Cut chicken into 1.5-inch cubes
Whisk soy sauce, honey, garlic, rice vinegar, ginger, and lime juice in a bowl
Seal chicken in a bag with marinade and chill 20-120 minutes
Skewer chicken, alternating with vegetables every other piece
Preheat grill to 375-400°F
Oil grill grates; discard excess marinade
Grill 4-5 minutes per side without rotating
Brush with half the reserved marinade before removing

For juicier results, marinate chicken breasts instead of thighs
