Description
Tender chicken skewers glazed with a glossy teriyaki sauce, grilled for smoky flavor and vibrant Japanese-inspired sweetness. Balance soy, honey, and rice vinegar for perfect caramelization.
Ingredients
2 lb boneless, skinless chicken thighs
1/2 cup low-sodium soy sauce (or grain-based soy for gluten-free)
1/3 cup honey
3 cloves minced garlic
2 tbsp rice vinegar
1 tsp ground ginger
1 tbsp lime juice
1 bundle bell peppers/zucchini (optional)
Red onion slices (optional)
Instructions
Cut chicken into 1.5-inch cubes
Whisk soy sauce, honey, garlic, rice vinegar, ginger, and lime juice in a bowl
Seal chicken in a bag with marinade and chill 20-120 minutes
Skewer chicken, alternating with vegetables every other piece
Preheat grill to 375-400°F
Oil grill grates; discard excess marinade
Grill 4-5 minutes per side without rotating
Brush with half the reserved marinade before removing
Notes
For juicier results, marinate chicken breasts instead of thighs
Brine chicken in saltwater (1/2 tsp salt per 4 cups water) 30 minutes before marinating
Use wooden skewers for enhanced earthy flavor
Substitute maple syrup for honey if preferred
Freshly grated ginger is brighter than ground
Rice vinegar is essential for balancing richness
