Description
This grilled chicken marinade makes chicken juicy, tender, and flavorful. A simple, easy recipe perfect for grilling or baking that takes under 55 minutes total.
Ingredients
½ cup extra virgin olive oil
½ cup balsamic vinegar
¼ cup soy sauce (low sodium)
¼ cup Worcestershire sauce
⅛ cup lemon juice
¾ cup brown sugar
2 tsp dried rosemary
2 tbsp Dijon mustard
1½ tsp salt
1 tsp ground black pepper
2 tsp garlic powder
6 chicken breasts (about 3.5 lb)
Instructions
1. In a large bowl, whisk together olive oil, vinegar, soy sauce, lemon juice, mustard, sugar, and spices until smooth.
2. Reserve ½ cup of the marinade for basting during grilling.
3. Add chicken breasts to a resealable bag and pour in marinade. Seal and refrigerate for at least 30 minutes or up to 6 hours.
4. Preheat grill to medium-high heat and lightly oil the grates.
5. Remove chicken from marinade, letting excess drip off. Grill 5–6 minutes per side until internal temperature reaches 165°F (74°C).
6. Baste with reserved marinade during the final minutes of grilling for added flavor.
7. Let the chicken rest for 5 minutes before slicing and serving.
Notes
Marinating for 4–6 hours produces the most flavor, but even 30 minutes makes a difference.
Always reserve marinade before adding raw chicken if you plan to use it later for basting.
For meal prep, store cooked chicken in an airtight container for up to 4 days or freeze for 3 months.
You can also bake this recipe at 400°F for 18–22 minutes for similar results.
