Description

Juicy, smoky chicken skewers marinated in a bold blend of smoked paprika, chipotle, and honey, grilled to perfection for summer gatherings or quick weeknight meals.


Ingredients

8 oz chicken breast, cubed into 1.5-inch pieces
3 tbsp olive oil
1 tbsp smoked paprika
1 tsp chipotle powder
2 tbsp honey
3 garlic cloves, minced
2 tbsp lemon juice
1 tsp salt
1/2 tsp white pepper
8 skewer sticks (wooden or metal)


Instructions

In a large bowl, whisk olive oil, smoked paprika, chipotle, honey, garlic, lemon juice, 1/2 tsp salt, and white pepper.
Add chicken and toss to coat. Marinate at room temperature for 15 minutes or refrigerate for 30 minutes.
Thread chicken onto skewers (soak wooden skewers 30 minutes beforehand).
Preheat grill to 400°F. Oil grates. Grill skewers 5–8 minutes per side until golden and slightly charred, rotating for even cooking.


Notes

For gluten-free, omit smoked paprika.
Adjust chipotle for spice level.
Refrigerate skewers up to 24 hours before grilling.
Add bell peppers or onions for veggie skewers.
