Description

Restaurant-quality grilled chicken breasts basted with a rich garlic-butter sauce and fresh parsley. Juicy, charred, and tender with a bright lemon finish. Pork-free, alcohol-free, and simple to make.


Ingredients

4 (6-ounce) boneless, skinless chicken breasts
1/2 cup unsalted butter (softened)
4 garlic cloves (minced)
1/4 cup flat-leaf parsley (chopped)
1 lemon (zest and juice)
1 teaspoon salt
1/2 teaspoon black pepper


Instructions

Pat chicken dry with paper towels
Season both sides with salt, pepper, and half the lemon zest
Let rest 10 minutes at room temperature
Mix butter, garlic, parsley, remaining lemon zest, and squeezed juice in a bowl
Stir until smooth and slightly streaky
Cover and refrigerate garlic butter until ready to use
Preheat grill to 400°F
Place chicken on center rack and cook 5-7 minutes per side
Baste with garlic butter during last 2 minutes of grilling


Notes

Use fresh garlic, not pre-minced varieties
Lemon juice can be substituted with lime juice
For dairy-free, replace butter with vegan butter
Adjust salt if using mushroom or vegetable broth
