Ingredients
4 skin-on chicken thighs
1/3 cup hot honey
1 tsp kosher salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
Pat chicken dry with paper towels
Season both sides with salt and pepper
Drizzle olive oil over exposed joints of chicken
Heat grill to 450°F
Oil grates with paper towel dipped in oil
Place chicken skin-side down on grill
Cook 5 minutes without moving
Rotate 90° for 3-4 minutes for crosshatch marks
Flip chicken and cook 6 minutes total, basting with hot honey during last 2 minutes
Remove when internal temperature reaches 165°F
Rest 5 minutes before serving

Brine briefly: Soak in ice water + 1 tsp salt for 30 minutes for juicier meat
Monitor grill temperature with thermometer
Oven finish: Transfer to 350°F oven if grilling is problematic
