Grilled hot honey chicken skewers offer a balance of smoky, sweet, and spicy flavors. Marinated chicken is charred on the grill and glazed with sticky, caramelized honey, perfect for weeknight dinners or summer gatherings.
Ingredients
Chicken breast, 1.5 lbs, cubed into 1.5″ pieces
Olive oil, 2 tbsp
Hot honey, 1/4 cup
Kosher salt, 1 tsp
Black pepper, 1/2 tsp
Garlic powder, 1 tsp
Soy sauce, 2 tbsp
Instructions
Cut chicken into uniform cubes
Combine olive oil, soy sauce, salt, pepper, and garlic powder in bowl
Marinate chicken 15 minutes at room temperature
Thread 4-5 pieces onto skewers (soak wooden skewers 30 minutes first)
Preheat grill to medium heat (350-400°F)
Brush grates with oil to prevent sticking
Place skewers on grill, cooking 4-5 minutes per side
Brush hot honey mixture over skewers during last 2 minutes
Cook until honey forms sticky glaze and chicken registers 165°F
Remove skewers and let rest 5 minutes before serving
Notes
Use canola oil (smoke point 400°F) for high-heat grilling
Adjust spice level by varying hot honey amount
Substitute with tofu cubes, shrimp, or tempeh (adjust cooking times)
