Ingredients
2 lbs chicken breasts, boneless and skinless
6 large Yukon Gold potatoes, cut into 2-inch chunks
1 cup low-sodium chicken broth
3 whole carrots, sliced into rounds
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp dried herb blend (thyme and rosemary)
Instructions
Wash and peel the potatoes, slicing them into uniform 2-inch chunks.
Pat the chicken breasts dry with paper towels.
In a small bowl, combine minced garlic and the dried herb blend.
Place half of the potato chunks at the bottom of the slow cooker insert.
Layer the chicken breasts directly on top of the potato bed.
Distribute the remaining potatoes and sliced carrots around and over the chicken.
Drizzle the olive oil over the mixture and sprinkle with the herb-garlic blend.
Pour the chicken broth over the ingredients.
Cover and cook on low for 7 hours until the chicken is tender and potatoes are cooked through.
Notes
Ensure potatoes are cut into uniform pieces to promote even cooking. For extra flavor, you can sear the chicken in a pan before placing it in the slow cooker, though it is not necessary for this easy version.
