Ingredients
1.5 lbs chicken breast, cut into 1-inch cubes
3/4 cup all-purpose flour (use panko for extra crunch)
1 tablespoon granulated garlic
1/2 cup hot honey (see recipe notes)
1 teaspoon lemon juice
Oil for frying
Instructions
Pat chicken cubes dry and cut into 1-inch pieces
In a bowl, mix flour and granulated garlic
Heat oil in a skillet to 350°F/175°C
Dredge chicken in flour mixture, shaking off excess, and fry until golden (3-4 minutes), using a wire rack to drain
Off heat, stir hot honey with 1 tsp lemon juice to thin, then toss with hot chicken until fully coated
Notes
Chill chicken in freezer for 15 minutes before frying for extra crisp
Maintain oil temperature at 350°F using a kitchen scale
Toast garlic powder in a dry pan for 30 seconds before mixing with flour
Adjust hot honey intensity to taste
Use fresh hot honey (store-bought or homemade)
