Description
Golden-brown summer squash tossed in olive oil and garlic powder, air-fried to crisp perfection. A low-oil, high-flavor recipe ready in 25 minutes, ideal as a Mediterranean-inspired side or snack.
Ingredients
4 cups summer squash (zucchini or pattypan), sliced into 1/2-inch rounds
1 tbsp olive oil
1 tsp garlic powder (or 1/2 tsp granulated garlic + 1/2 tsp onion powder)
1/2 tsp salt (adjust to taste)
Instructions
Clean squash under cold water and pat dry.
Combine olive oil, garlic powder, and salt in a bowl.
Toss squash slices in oil mixture until fully coated.
Arrange in a single layer in the air fryer basket, avoiding stacking.
Air fry at 370°F (190°C) for 8 minutes, flipping halfway.
Check for tenderness; air fry 1-2 minutes longer if needed.
Notes
Preheat air fryer 3 minutes for best results.
Use fresh, under-ripe squash for optimal crispiness.
Avoid aged squash (5+ days post-harvest). If adding extra flavor, sprinkle 1/4 tsp paprika before frying.
Batch cooking ensures even crisping. Fill air fryer no more than 50% full.
