A rich North Indian dish with tender chicken simmered in a velvety tomato-cream sauce, infused with aromatic garam masala, all cooked effortlessly in one skillet for gourmet flair.
Ingredients
1.5 lbs bone-in chicken thighs (skinless for lower fat)
3 tbsp unsalted butter (or 1 tbsp olive oil + 2 tbsp heavy cream)
1 (24 oz) can tomato sauce
1 cup heavy cream (or half-and-half/evaporated milk)
2 tbsp garam masala
Salt and pepper to taste
Instructions
Pat chicken dry and season with salt and pepper. Sear in melted butter in a skillet until golden on both sides
Deglaze with ½ cup water, scraping browned bits. Add tomato sauce and simmer 10 minutes
Return chicken to the pan. Stir in cream and garam masala. Simmer uncovered 25 minutes until tender
Let rest 5 minutes before serving

Use freshly ground garam masala for maximum flavor
Simmering uncovered thickens the sauce significantly
Bone-in chicken enhances texture
