Ingredients
4 boneless, skinless chicken breasts (5 oz each)
2 fresh lemons (use zest and juice)
2 tbsp olive oil (or avocado oil)
3 minced garlic cloves
1 tsp dried oregano (or 1 tbsp fresh oregano)
1 tbsp ground black pepper (plus extra for seasoning)
Instructions
Pat dry chicken breasts with paper towels.
Zest both lemons into a small bowl.
Juice lemons to measure 3 tablespoons.
Combine lemon zest, juice, olive oil, garlic, and oregano in a bowl to create the marinade.
Season chicken with salt and pepper.
Submerge chicken in marinade, cover, and refrigerate for 30-60 minutes.
Preheat grill to medium-high (375°F/190°C).
Oil grill grates with a high-smoke-point oil.
Grill chicken for 5-7 minutes per side.
Transfer chicken to a cutting board, cover, and rest for 5 minutes.
Notes
Add 1 tsp maple syrup to marinade for caramelized edges.
