Ingredients
1 head romaine lettuce, chopped
1 cup croutons
1/2 cup homemade dressing
2 tbsp grated Parmesan cheese or nutritional yeast
1 tsp anchovy paste (or 1 tsp soy sauce)
Instructions
Make the dressing by blending 1/4 cup mayonnaise, 2 tbsp lemon juice, 1 tsp anchovy paste (or soy sauce), and 1 clove minced garlic in a blender until smooth.
Prepare the salad by cutting romaine into bite-size pieces and tossing with croutons in a large bowl.
Add 1/4 cup dressing to the bowl and gently toss until the romaine is moist but not soggy.
Sprinkle grated Parmesan or nutritional yeast over the salad and drizzle with the remaining dressing.
Notes
Blend the dressing for an extra 30 seconds for a smoother texture.
Toast store-bought croutons in a dry skillet for 2 minutes to boost crunch.
Use a microplane grater for Parmesan to avoid clumps.
Store leftover dressing in an airtight container in the fridge for up to 3 days.
For vegan versions, substitute mayonnaise with avocado mousse.
