Description

Tender Mexican-inspired grilled chicken thighs marinated in zesty lime juice and fresh cilantro. The citrus-herb marinade tenderizes the meat while grilling creates crispy charred edges. Ready in 45 minutes, this easy recipe delivers restaurant-quality flavor with vibrant herbs and smoky depth.

Ingredients

Scale

1.5 lbs bone-in, skin-on or skinless chicken thighs
4 cloves garlic, minced
1/2 cup lime juice (freshly squeezed)
1/2 cup cilantro (stems included), chopped
1 tsp ground cumin
1 tsp salt

Instructions

In a bowl, whisk lime juice, minced garlic, chopped cilantro, cumin, and salt. Add chicken thighs and coat thoroughly
Preheat grill to high heat. Pat chicken dry and place skin-side down for 5-7 minutes until charred. Flip and cook 4-6 minutes until internal temperature reaches 165°F
Remove from grill. Let rest 5 minutes, then top with extra cilantro and lime wedges before serving

Notes

Use fresh lime juice instead of bottled for maximum potency
Pat chicken dry before grilling to create crispy exteriors
Maintain grill at 250°F indirect heat if needed for gentler cooking
Let chicken rest 5 minutes to prevent dry texture
Garnish with whole cilantro leaves for visual appeal
