Ingredients
Chicken thighs
4 boneless, skin-on (skin keeps meat moist)
Lime juice
1/3 cup (freshly squeezed preferred)
Minced garlic
2 cloves (fresh = maximum flavor)
Cilantro
1 cup chopped (plus extra for garnish)
Olive oil
2 tablespoons (avocado oil optional)
Salt
1 teaspoon (adjust to taste)
Black pepper
1/2 teaspoon (freshly ground best)
Instructions
Cut chicken thighs into 3/4″ pieces for even cooking
In large bowl, combine lime juice, garlic, half the cilantro, olive oil, salt, and pepper
Add chicken pieces and mix until fully coated
Seal bowl with plastic wrap and refrigerate 15-30 minutes (avoid longer marination to prevent sogginess)
Preheat grill to medium-high heat (375°F-400°F)
Lightly brush grates with oil to prevent sticking
Cover chicken and let sit at room temperature 5 minutes before grilling
Arrange chicken in single layer on preheated grill
Cook first side 6-8 minutes until charred but not raw inside
Flip carefully using tongs and cook second side 5-7 minutes
Transfer to clean plate and let rest 5 minutes before serving

Garnish with additional cilantro before serving
