Description
This Mexican-inspired Cilantro Lime Chicken Marinade zests up tender chicken with the bright flavors of fresh herbs, citrus, and cumin. Perfectly balanced, it adds moisture and bold grill-ready flavor without overpowering your palate.
Ingredients
1 cup packed cilantro (including stems)
1/3 cup lime juice (from 2–3 limes)
4 garlic cloves (minced or grated)
1/4 cup olive oil (light or extra virgin)
1.5 lbs boneless chicken (cut into 4 portions)
1 tsp cumin seeds (optional)
1 tsp sea salt (adjust to taste)
Instructions
Combine cilantro, garlic, lime juice, olive oil, cumin, and salt in a blender. Pulse 8-10 times until semi-chunky.
Place chicken in an airtight container. Pour marinade over it and turn to coat evenly.
Seal the container and refrigerate for 2-6 hours.
Preheat grill or oven to 400°F (205°C). For oven, use a baking sheet placed 4-6 inches from the heat source.
Grill chicken 6-7 minutes per side for 12-14 oz breasts, or for thighs and drumsticks, cook 8-10 minutes total. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
Notes
Avoid marinating in plastic bags, as they trap condensation and may dull flavors.
For a hint of sweetness and caramelization, brush the chicken with 2 tbsp honey during the last 3 minutes of cooking.
Leftover marinade (unused portion) can be frozen for later use.
