Description
Easy chicken grilled cheese made with tender chicken, melty cheese, and a crispy Parmesan crust for a quick, satisfying meal.
Ingredients
1 cup diced cooked chicken
1½ cups shredded Colby Jack cheese
¾ cup chopped green olives
8 slices sourdough bread
4 tablespoons butter
2–4 tablespoons grated Parmesan cheese
Instructions
1. Preheat the oven to 450°F.
2. Combine the chicken, shredded cheese, and green olives in a bowl until evenly mixed.
3. Butter one side of each slice of bread.
4. Sprinkle Parmesan cheese over the buttered side of four slices and place them butter-side down on a baking sheet.
5. Divide the chicken mixture evenly over the bread slices.
6. Top with remaining bread slices, buttered side up.
7. Bake for 6–8 minutes, flip carefully, then bake another 6 minutes until golden and crisp.
Notes
Let the butter soften before spreading for easier handling.
Use evenly diced chicken so it warms through as the cheese melts.
Do not overfill the sandwiches to keep the bread crisp.
