Description

This simple and easy Chicken Caesar Salad is packed with juicy grilled chicken, crisp romaine, homemade croutons, and a creamy Caesar dressing made from scratch  perfect for a quick lunch or dinner.


Ingredients

FOR THE CROUTONS:

3 tablespoons extra-virgin olive oil

2 tablespoons chopped fresh parsley

1 garlic clove, grated

Kosher salt and pepper, to taste

4 cups ciabatta bread cubes

FOR THE CHICKEN:

3 tablespoons olive oil

2 tablespoons lemon juice

2 teaspoons lemon zest

1 garlic clove, grated

1 ½ pounds boneless, skinless chicken breasts

Kosher salt and pepper, to taste

FOR THE DRESSING:

¼ cup mayonnaise

¼ cup buttermilk

3 tablespoons grated Parmesan cheese

1 garlic clove, grated

1 tablespoon lemon juice

1 ½ teaspoons Dijon mustard

½ teaspoon Worcestershire sauce

Salt and pepper, to taste

FOR THE SALAD:

2 heads romaine lettuce, roughly chopped

¼ cup freshly grated Parmesan

Homemade croutons


Instructions

1. Preheat oven to 400°F (200°C). In a small bowl, whisk olive oil, garlic, parsley, salt, and pepper. Toss bread cubes and bake for 13–15 minutes or until golden.

2. In a bowl, combine olive oil, lemon juice, zest, garlic, salt, and pepper. Marinate chicken for 2 hours in the fridge.

3. Preheat grill or grill pan to medium-high heat. Grill chicken 4–5 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes, then slice.

4. In a medium bowl, whisk mayonnaise, buttermilk, Parmesan, garlic, lemon juice, Dijon, and Worcestershire until creamy. Season to taste.

5. In a large bowl, combine chopped romaine, grilled chicken, and croutons. Drizzle with dressing, toss gently, and top with Parmesan before serving.


Notes

You can prep the dressing and croutons 1–2 days ahead.

Always toss the salad with dressing just before serving to keep it fresh.

If preferred, swap chicken for shrimp, salmon, or tofu.
