Description
A vibrant Italian dish combining tender grilled chicken breast with creamy fresh mozzarella, juicy tomatoes, and aromatic basil. Light, zesty, and restaurant-quality, this recipe avoids heavy sauces, relying on olive oil and aged balsamic vinegar for richness. Perfect for summer dinners or quick weeknight meals.
Ingredients
4 (6-ounce) boneless, skinless chicken breasts
8 ounces fresh whole milk mozzarella
2 medium-sized ripe tomatoes
1 cup fresh basil leaves
2 tablespoons aged balsamic vinegar (60+ days)
2 tablespoons robust extra virgin olive oil
2 garlic cloves, minced
Instructions
Whisk together balsamic vinegar, olive oil, and minced garlic in a shallow dish
Add chicken breasts, ensuring they are fully submerged. Cover and refrigerate for 15 minutes
Season mozzarella cubes and tomato slices with salt and pepper while the chicken marinates
Preheat grill to medium-high (375°F). Pat chicken dry with paper towels
Grill chicken for 6–7 minutes per side, or until fully cooked. Let rest for 5 minutes
Arrange seasoned mozzarella and tomato slices on a platter. Top with grilled chicken
Drizzle remaining marinade over the dish and garnish with fresh basil leaves
Notes
Mozzarella may be substituted with burrata for a creamier texture
Cherry tomatoes are a suitable alternative to medium-sized tomatoes
Dried basil can be used if fresh is unavailable
Ensure olive oil is halal-certified if preferred
Balance grill timing: overcooking may dry chicken; undercooking risks mozzarella melting
Chill marinated chicken in airtight container for up to 1 day before grilling
