Ingredients
2 (6 oz each) Chicken Breasts, cut into cubes
4 tbsp Buffalo Sauce (homemade or store-brand)
3 tbsp Mayo (full-fat or Greek yogurt for lighter option)
2 large Celery Stalks, unpeeled and chopped
2 tbsp Ranch Dressing (optional: substitute with blue cheese)
Blue Cheese Crumbles, for garnish
4 tbsp Water
Lemon Wedges, for serving
Instructions
Grill or pan-sear chicken cubes until fully cooked. Toss with 3 tbsp buffalo sauce.
Mix mayo, 1 tbsp buffalo sauce, and ranch dressing until smooth. Adjust spice level as needed.
Combine chopped celery and 4 tbsp water in a bowl until slightly softened. Add chicken and mix with 1 tbsp dressing.
Assemble salad on a platter. Top with remaining dressing, blue cheese crumbles, and additional celery.
Chill for 30 minutes (optional) or serve immediately with lemon wedges.
