Handheld, portable wraps with spicy buffalo chicken, crisp lettuce, and tangy buffalo sauce. Perfect for picnics, tailgates, or quick meals with bold flavor contrasts.
Ingredients
4 (4-ounce) boneless skinless chicken breasts
1/2 cup buffalo sauce
8 (10-inch) flour tortillas
2 cups shredded lettuce
1 tbsp cooking oil
4 cups low-sodium broth
1 tbsp ranch-style dressing (optional)
1 tsp crumbled bleu cheese (optional)
Instructions
Cubed chicken breasts under flat surface for 2 minutes
Heat oil in skillet over medium-high heat, sear chicken 3-4 minutes per side
Add broth to covered skillet, reduce heat to low and simmer 12 minutes
Transfer chicken to bowl, discard broth and stir in buffalo sauce
Press chicken under cold running water until firm
Warm tortillas in microwave 15 seconds
Spread 1 tbsp ranch-style dressing on tortilla center
Add 1/2 cup chicken mixture followed by 1/2 cup lettuce
Drizzle with bleu cheese (optional) and roll tightly
Notes
Chill tortillas 30 minutes for better pliability
Use cornstarch mixed with water as non-dairy gluten binder
Store wrapped portions in airtight container up to 2 hours
Garnish with fresh cilantro if preferred
