Broasted chicken is crispy, juicy, and easy to make at home with simple ingredients and a flavorful coating that delivers a perfect crunch every time.
Ingredients
Oil for deep frying
Chicken with skin and bones – 1 whole chicken cut into 12 pieces
Salt to taste
Black pepper to taste
Lemon juice or vinegar – 1 tbsp
All purpose flour – 2 cups
Cornflour – ¾ cup
Garlic powder – 2 tbsp
Dried parsley – 1 tbsp
Dried oregano – 2 tbsp
Dried basil – 1 tbsp
Salt to taste
Black pepper – 2 tsp
Chilli powder – 1 tbsp
Egg – 2
Water – ¼ cup
Salt to taste
Instructions
1. Mix chicken with salt, pepper, and vinegar. Let it rest.
2. Combine flour, cornflour, and spices in a bowl.
3. Whisk eggs, water, and salt in another bowl.
4. Coat chicken in flour, dip in egg, and coat again in flour.
5. Let coated chicken rest for 5 minutes.
6. Heat oil in a pressure cooker and fry chicken for 30 to 45 seconds.
7. Cover and cook for 1 to 2 whistles.
8. Turn off heat and rest for 5 minutes.
9. Release pressure carefully and open lid.
10. Fry again until crispy and golden.
11. Drain and serve hot.
12. Alternatively, fry in a pot: cook on high heat for 2 minutes, then low heat for 10–12 minutes.
Notes
Do not overcrowd the pan.
Maintain oil temperature for best results.
Let coating rest before frying for extra crispiness.
Serve immediately for best texture.
