Ingredients
3 cups Bisquick mix
1 whole chicken (3–4 lbs), trimmed
8 cups vegetable broth
1 cup peas (frozen preferred)
3 cloves garlic, minced (or 1 tbsp garlic powder)
Instructions
Quarter chicken and remove excess fat
Warm 8 cups broth in a large pot over medium heat
Pulse frozen peas to slightly thaw and add to the pot
Simmer chicken and peas in broth until nearly tender (20 minutes)
Remove chicken to a bowl and reserve 1 cup of the cooking liquid
Shred chicken meat directly into the pot or storage container
Mix 2 3/4 cups Bisquick with reserved broth, 1 cup milk, and melted butter to form a soft dough
Drop dumpling dough (1 tbsp per dumpling) into the pot
Cover and simmer dumplings until golden and tender (15-20 minutes)
Serve with chicken and peas in broth.
Notes
Replace chicken with turkey or boneless thighs for alternatives
Use garlic powder if fresh garlic is unavailable
