Description

A colorful Mediterranean salad combining earthy roasted beets, tangy goat cheese, and vibrant greens with a sweet-tangy balsamic-honey dressing. Perfect for a healthy, satisfying meal.


Ingredients

4 medium beets
4 cups mixed greens
8 oz goat cheese, crumbled or soft log
2 tbsp balsamic glaze
1 1/2 tbsp honey
1/4 cup olive oil
Salt and pepper to taste


Instructions

Roast beets in 350°F oven, wrapped in foil, until fork-tender (30–40 minutes)
Peel and dice beets into 1-inch cubes
Combine mixed greens with arugula (optional) and pecans in a large bowl
Whisk honey, balsamic glaze, and olive oil in a small jar
Season with salt and pepper to taste
Add beet cubes and crumbled goat cheese to greens
Drizzle dressing over the salad
Chill for 30 minutes before serving
