Description
These smoky-sweet BBQ chicken meatballs offer a halal-compliant, lighter alternative to beef. Made with ground chicken, a spice-breadcrumb mixture, and tangy Greek yogurt, they’re baked to perfection with homemade BBQ sauce.
Ingredients
Ground chicken 1 pound (450g)
Breadcrumbs 1/2 cup
Smoked paprika 1 teaspoon
Garlic powder 1 teaspoon
Salt 1 teaspoon
Black pepper 1/4 teaspoon
BBQ sauce 3/4 cup
Greek yogurt 1/4 cup
Lemon juice 1 teaspoon
Instructions
Whisk Greek yogurt, lemon juice, and 2 tablespoons of BBQ sauce until smooth.
In a bowl, mix breadcrumbs with smoked paprika, garlic powder, salt, and black pepper.
Add ground chicken to the bowl with the spice blend. Combine gently with hands, avoiding overmixing.
Portion the mixture into 2-tablespoon-sized balls. Roll each one into a smooth sphere.
Pan-sear meatballs in olive oil for 2 minutes per side until browned (do not cook all the way through).
Brush warm meatballs with the yogurt-BBQ sauce mixture immediately after searing.
Bake at 400°F for 12-15 minutes until fully cooked. Apply the remaining BBQ sauce during the last 5 minutes of baking for a glossy finish.
Notes
Use 80% lean ground chicken for optimal moisture balance.
Apple cider vinegar can replace lemon juice for a milder flavor.
Ensure BBQ sauce is halal and free from hidden additives.
Store leftovers in the fridge for up to 3 days in an airtight container.
