Ingredients
800g skinless, boneless chicken breast
2 medium bell peppers (red, yellow, or blend), diced
2 medium fresh zucchini, peeled and diced
1 cup BBQ sauce (sweet or smoky style)
2 tbsp olive oil (for greasing foil and marinade)
3 cloves minced garlic
1 tsp Italian seasoning or dried oregano
Instructions
Slice chicken into 1-inch steaks. Dice bell peppers and zucchini into 1/2-inch pieces
Combine 1/2 tbsp olive oil, 1 tsp garlic, and Italian seasoning in a bowl. Toss chicken until coated. Let marinate 15 minutes
Grease 4 large foil sheets. Place 1/4 of the vegetables in each, then top with 2 chicken slices
Pour 1/4 cup BBQ sauce over each packet. Add remaining veggies evenly
Double-fold edges to seal tightly. Grill at 180°C/350°F for 25-30 minutes until chicken reaches 74°C/165°F
Let packets rest 5 minutes. Carefully open and serve directly from foil

Ensure BBQ sauce is pork-free and doesn’t contain alcohol (e.g., use a vegetarian-friendly sauce if needed)
For extra moisture, add a splash of water or broth to the packets before sealing
Wrap foil edges double-layer for secure cooking
