Description

A vibrant, crispy-tender chicken bowl with sweet, spicy, and tangy flavors. Loaded with grilled chicken, fresh veggies, and a sweet chili-cilantro sauce. Healthy and crowd-pleasing Asian-American fusion meal.


Ingredients

2 boneless, skinless chicken breasts
1 ¼ cups uncooked wild rice blend
½ cup shredded cabbage
3 tablespoons sweet chili sauce
2 tablespoons chopped cilantro
1 avocado
1 tablespoon olive oil
Salt and pepper to taste


Instructions

Season chicken with salt, pepper, and 1 tsp sweet chili sauce.
Heat 1 tbsp oil in a skillet over medium-high heat.
Sear chicken 4-5 minutes per side until golden and cooked through.
Boil rice according to package instructions.
Toss cabbage with 1 tbsp sweet chili sauce.
Halve avocado, remove pit.
Layer cooked rice in a bowl, add chicken slices, then cabbage mixture.
Top with remaining rice and cabbage, avocado, and cilantro.


Notes

Marinate chicken in sweet chili sauce for 30 minutes for deeper flavor.
Use thighs for juicier results.
Add lime wedges as optional garnish.
