Ingredients
2 medium zucchini, cut into 1/2-inch halves
2 cups summer squash, peeled and sliced diagonally
2 tbsp olive oil (use avocado oil for higher smoke point)
1 tsp dried oregano
1/2 tsp ground cumin (optional)
Salt and pepper to taste (use sea salt for crunch)
Instructions
Wash, dry, and cut zucchini and summer squash into even-size pieces.
Toss vegetables with olive oil, oregano, cumin, salt, and pepper in a large bowl.
Preheat air fryer to 400°F (205°C) for 3 minutes. Place a wire rack inside the basket if using.
Add 3–4 cups of vegetables to the basket without overlapping. Cook for 12 minutes.
Shake the basket or flip each piece, then cook an additional 6–8 minutes or until golden and crisp.

Pat vegetables dry before seasoning to prevent sogginess.
Stir or flip every 5 minutes for even browning.
For extra crunch, broil for 1 minute after cooking (watch closely to avoid burning).
